Easy Gluten-Free Cornbread Stuffing

Giving up gluten does not mean having to give up our favorite holiday dishes. Traditional stuffing can be made with gluten-free cornbread, satisfying everyone at the table this holiday season.

Provision Kitchen Gluten-Free Cornbread Stuffing

Serves 4 to 6

For the cornbread:
2 cups cornmeal
2 cups corn flour
1 tsp baking powder
½ tsp baking soda
1 tsp salt
½ cup Melt Organic spread or butter
2 large eggs
2 cups almond milk (it might be difficult to find organic, but Silk Unsweetened Almond is non-GMO and free of carrageenan)

Mix all ingredients together and bake at 350 degrees for 20-30 minutes. Cool completely. Crumble in medium size chunks.

Vegetables and seasoning:
2 cups chopped onion
1 cup chopped celery
2 Tbsp minced garlic
2 Tbsp fresh rosemary, chopped
1 tsp salt
1 tsp olive oil

2 to 3 cups vegetable stock

Sautee onion, celery, garlic, rosemary and salt in olive oil on stovetop. Cook until tender and remove from heat.

Mix cooked cornbread crumbs and sautéed veggies together in bowl. Add 2-3 cups vegetable stock to reach desired stuffing consistency. Press into a greased dish and bake at 350 degrees for approximately 45 minutes, until liquid is absorbed. Serves 4-6.
