Spelt is an ancient grain with a hard hull around it that has been largely ignored by modern food processors. When food is sprouted, it opens and is easier to digest, allowing the body to absorb more of the nutrients. Because sprouted spelt is unprocessed, the healthy gluten can be tolerated by individuals with gluten sensitivity. The crust is low glycemic, so it also makes a great choice for diabetics.
